Description

Craving something sweet but don’t want dozens of cookies lying around? These Almond Joy Cookies are a quick dessert, easy baking project, and the perfect small batch treat loaded with chocolate chips, sweet coconut flakes, and crunchy almonds. Inspired by the nostalgic candy bar, these chewy, golden cookies come together in under 30 minutes—ideal for breakfast ideas, dinner ideas, or a satisfying healthy-ish snack. Whether you’re making them for yourself or sharing just a few, these cookies deliver big flavor with minimal effort.

Ingredients

1/4 cup unsalted butter, softened

1/4 cup brown sugar, packed

2 tablespoons granulated sugar

1/2 teaspoon vanilla extract

1 egg yolk

1/2 cup all-purpose flour

1/4 teaspoon baking soda

1/8 teaspoon salt

1/4 cup shredded sweetened coconut

1/4 cup semi-sweet chocolate chips

2 tablespoons sliced almonds (toasted optional)

Instructions

1. Cream together softened butter, brown sugar, and granulated sugar in a medium bowl until smooth and fluffy.

2. Add the egg yolk and vanilla extract, mixing until fully combined.

3. In a separate bowl, whisk together flour, baking soda, and salt.

4. Slowly mix the dry ingredients into the wet ingredients until just combined.

5. Fold in shredded coconut, chocolate chips, and sliced almonds.

6. Scoop dough into 6–8 portions and place on a parchment-lined baking sheet. Flatten slightly.

7. Bake at 350°F (175°C) for 10–12 minutes until the edges are golden and centers are soft.

8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Toasting the almonds before adding gives the cookies a deeper nutty flavor.

If your dough feels too soft, chill it for 15–20 minutes to prevent spreading.

A light sprinkle of flaky sea salt on top before baking adds contrast and elevates the flavor.
