1.5 lbs ground beef
5 medium Yukon Gold potatoes, peeled and diced
2 carrots, peeled and chopped

2 cloves garlic, minced
1.5 cups shredded cheddar cheese
0.5 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil (for sautéing)
Optional garnish: freshly chopped parsley
Instructions
1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the ground beef and cook until browned. Season with salt and pepper, then drain the excess fat.
3. In the same skillet, add the remaining olive oil and sauté onions and carrots for 4–5 minutes until soft. Stir in garlic and cook for 1 more minute.
4. Add green beans, smoked paprika, and thyme to the skillet. Cook everything together for 2 more minutes.
5. In your prepared casserole dish, layer the diced potatoes evenly across the bottom.
6. Spread the cooked beef over the potatoes, followed by the sautéed vegetables.
7. Mix the beef broth and Worcestershire sauce, then pour evenly over the dish.
8. Top everything with shredded cheddar cheese.
9. Cover with foil and bake for 35 minutes. Remove foil and bake another 15–20 minutes until the potatoes are tender and the cheese is golden.
10. Let cool for 5–10 minutes, garnish with chopped parsley, and serve warm.
