Ingredients

Vanilla Cake:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

Apple Filling:

  • 3 medium apples (peeled, diced)
  • 2 tbsp butter
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water

Crumble Topping:

  • 1/2 cup rolled oats
  • 1/3 cup flour
  • 1/3 cup brown sugar
  • 1/4 cup melted butter
  • Pinch of salt
  • 1/2 tsp cinnamon

Ice Cream:

  • 1 1/2 quarts vanilla ice cream (slightly softened)

Whipped Topping:

  • 1 1/2 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Optional Garnish:

  • Thin apple slices, extra crumble, caramel drizzle

Instructions

  1. Preheat oven to 350°F (175°C). Line and grease two 8-inch cake pans.
  2. Mix dry cake ingredients. Cream butter and sugar. Add eggs, vanilla, then alternate flour and milk. Bake 22-25 minutes. Cool, then slice into 4 thin layers.
  3. In a saucepan, cook apples, butter, brown sugar, cinnamon, nutmeg, and lemon until soft. Add cornstarch slurry and simmer until thickened. Cool.
  4. Mix crumble ingredients and bake at 350°F for 12-15 minutes. Cool and break into chunks.
  5. Line a springform pan with parchment. Layer cake, ice cream, apple filling, and crumble. Repeat, ending with cake. Freeze 4-6 hours.
  6. Whip cream with powdered sugar and vanilla until stiff. Frost cake and decorate. Freeze until ready to serve.
