Ingredients

1 lb ground turkey

2 cloves garlic, minced

1 tbsp fresh ginger, grated

2 tbsp soy sauce (or tamari for gluten-free)

2 tbsp hoisin sauce

1 tbsp rice vinegar

1 tsp sesame oil

1/2 cup shredded carrots

1/2 red bell pepper, finely chopped

1/3 cup water chestnuts, chopped (optional)

3 green onions, sliced

1 head butter lettuce, leaves separated and washed

1 tbsp sesame seeds

1/2 tsp red pepper flakes or sriracha (optional)


Instructions

1. Wash and dry lettuce leaves; set aside.

2. Prepare all vegetables: chop bell pepper, green onions, water chestnuts, and shred carrots.

3. Heat oil in a large skillet over medium-high heat. Add garlic and ginger; sauté for 30 seconds.

4. Add ground turkey to skillet. Cook for 7–8 minutes, breaking it apart and browning.

5. Stir in chopped bell pepper, carrots, and water chestnuts. Cook for another 2–3 minutes.

6. In a bowl, whisk soy sauce, hoisin sauce, rice vinegar, and sesame oil. Pour into skillet.

7. Stir well and let the sauce simmer for 2 minutes, until slightly thickened.

8. Remove from heat. Stir in sliced green onions and optional chili flakes or sriracha.

9. Spoon filling into lettuce leaves, sprinkle with sesame seeds, and serve immediately.
