Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, thinly sliced
  • 3 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 tablespoons soy sauce (plus 1 for marinade)
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch (plus 1 for marinade)
  • 1/2 teaspoon sugar
  • 1/4 cup water or chicken broth
  • 1 tablespoon sesame oil (divided)
  • 1 tablespoon neutral oil (canola or avocado)

Instructions

  1. Slice the chicken and marinate with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and a dash of sesame oil. Let sit for 10–15 minutes.
  2. Blanch broccoli in boiling water for 2 minutes, then transfer to an ice bath.
  3. In a bowl, mix 2 tablespoons soy sauce, oyster sauce, sugar, 1 teaspoon cornstarch, and broth. Set aside.
  4. Heat neutral oil in a wok or large skillet over medium-high heat. Stir-fry chicken until golden and just cooked through. Remove from pan.
  5. Add a bit more oil, sauté garlic and ginger for 30 seconds until fragrant.
  6. Return chicken to the pan, add broccoli, and pour in the sauce. Stir-fry for 1–2 minutes until sauce thickens.
  7. Finish with a drizzle of sesame oil and optional sesame seeds or green onions.
  8. Serve hot with steamed rice or noodles.
