Ingredients

1 medium zucchini

1/4 cup all-purpose flour

2 large eggs

1/2 cup panko breadcrumbs

1/3 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

Olive oil spray (for baking)


Instructions

1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or spray lightly with olive oil.

2. Cut zucchini into fry-shaped sticks about 3 to 4 inches long and 1/2-inch thick. Pat dry thoroughly with paper towels.

3. Set up three bowls: one with flour, garlic powder, salt, and pepper; one with beaten eggs; one with panko and Parmesan mixed.

4. Dredge zucchini sticks in flour mixture, then dip in eggs, then coat with breadcrumb-Parmesan mix.

5. Place coated fries on baking sheet in a single layer. Spray tops lightly with olive oil.

6. Bake for 20–25 minutes, flipping halfway through, until golden and crisp.

Notes
