Ingredients

For the Banana Bread Cake:

  • 3 ripe bananas (mashed)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk

For the Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp heavy cream (optional)

For the Topping:

  • Fresh banana slices
  • Chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 8 or 9-inch round cake pans.
  2. Mash the ripe bananas in a medium bowl and set aside.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Set aside.
  4. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and mashed bananas, mixing until fully incorporated.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
  7. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes or until a toothpick comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat together the cream cheese and butter until smooth. Gradually add powdered sugar, then add vanilla extract and heavy cream if desired.
  10. Once the cakes are completely cool, spread a layer of frosting between the two cake layers. Frost the top and sides with the remaining frosting.
  11. Top the cake with banana slices and chopped pecans.
