Ingredients
For the Banana Bread Cake:
- 3 ripe bananas (mashed)
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
For the Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- 1/2 cup unsalted butter (softened)
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 1–2 tbsp heavy cream (optional)

- Fresh banana slices
- Chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour two 8 or 9-inch round cake pans.
- Mash the ripe bananas in a medium bowl and set aside.
- In a separate bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and mashed bananas, mixing until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
- Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat together the cream cheese and butter until smooth. Gradually add powdered sugar, then add vanilla extract and heavy cream if desired.
- Once the cakes are completely cool, spread a layer of frosting between the two cake layers. Frost the top and sides with the remaining frosting.
- Top the cake with banana slices and chopped pecans.
