  • 2 lbs Yukon Gold potatoes, diced into 1/2-inch cubes
  • 4 slices bacon, chopped

  • 1 tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil or bacon grease (as needed)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash and dice potatoes into uniform 1/2-inch cubes.
  2. Parboil potatoes in salted water for 5–6 minutes until slightly tender. Drain and let steam-dry.
  3. In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the grease in the pan.
  4. Add a bit of olive oil if needed, then add the potatoes to the skillet in an even layer. Let them cook undisturbed for several minutes to form a golden crust.
  5. Flip the potatoes and continue cooking for 15–20 minutes, flipping occasionally until all sides are crisp.
  6. Add diced onion (if using) and cook until softened.
  7. Sprinkle garlic powder, smoked paprika, salt, and pepper over the potatoes. Stir to coat evenly.
  8. Return the crispy bacon to the skillet and mix.
