Ingredients

  • 12 oz rotini pasta
  • 1 lb beef (sirloin or ribeye), sliced into bite-sized pieces
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup beef broth
  • 1 cup freshly grated parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook rotini pasta until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  2. In a large skillet over medium-high heat, melt 1 tbsp butter and sear the beef until browned. Season with salt, pepper, and Italian seasoning. Remove from skillet and set aside.
  3. In the same skillet, melt the remaining butter and sauté minced garlic until fragrant (about 30 seconds).
  4. Pour in beef broth, scraping up browned bits from the pan, and let simmer for 1 minute.
  5. Lower the heat and stir in heavy cream, allowing it to thicken slightly.
  6. Gradually whisk in parmesan cheese, stirring until smooth. If too thick, add a splash of reserved pasta water.
  7. Return the beef to the skillet and stir to coat with the sauce.
  8. Add the cooked rotini and toss until fully combined. Let it cook for another 1-2 minutes.
  9. Remove from heat, garnish with fresh parsley and extra parmesan, and serve immediately.
