Ingredients
- 12 oz rotini pasta
- 1 lb beef (sirloin or ribeye), sliced into bite-sized pieces
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup beef broth
- 1 cup freshly grated parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook rotini pasta until al dente. Drain and set aside, reserving 1/2 cup pasta water.
- In a large skillet over medium-high heat, melt 1 tbsp butter and sear the beef until browned. Season with salt, pepper, and Italian seasoning. Remove from skillet and set aside.
- In the same skillet, melt the remaining butter and sauté minced garlic until fragrant (about 30 seconds).
- Pour in beef broth, scraping up browned bits from the pan, and let simmer for 1 minute.
- Lower the heat and stir in heavy cream, allowing it to thicken slightly.
- Gradually whisk in parmesan cheese, stirring until smooth. If too thick, add a splash of reserved pasta water.
- Return the beef to the skillet and stir to coat with the sauce.
- Add the cooked rotini and toss until fully combined. Let it cook for another 1-2 minutes.
- Remove from heat, garnish with fresh parsley and extra parmesan, and serve immediately.
