Ingredients
2 medium zucchini
2 large eggs
1 cup panko breadcrumbs
0.5 cup grated Parmesan cheese
0.5 teaspoon garlic powder
0.5 teaspoon onion powder
0.5 teaspoon Italian seasoning
0.25 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
Olive oil spray
Marinara sauce or dip, for serving
Instructions
1. Wash and slice the zucchini into 1/4-inch rounds using a knife or mandoline.
2. In one bowl, beat the eggs. In another, mix panko, Parmesan, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
3. Dip each slice in the eggs, then press into the breadcrumb mixture.
4. Preheat air fryer to 400°F (200°C) for 3 minutes and spray basket with oil.
5. Arrange chips in a single layer. Spray tops lightly with oil.
6. Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
7. Remove and serve hot with your favorite dip.
