Ingredients

1 tablespoon butter

3 cloves garlic minced
1 cup crumbled feta cheese
0.5 cup cream cheese softened
0.5 cup cooked bacon chopped
0.25 cup grated Parmesan cheese
1 teaspoon lemon zest
0.25 teaspoon ground nutmeg
Black pepper to taste
1 tablespoon honey (optional glaze)
1 teaspoon Dijon mustard (optional glaze)
1 teaspoon balsamic vinegar (optional glaze)
Fresh thyme sprigs for garnish (optional)
Instructions
1. Lay the turkey breast flat and butterfly it by slicing horizontally, then open it like a book.
2. Place plastic wrap over the turkey and pound to ½ inch thickness. Season with salt and pepper.
3. In a bowl, mix spinach, garlic, feta, cream cheese, bacon, Parmesan, lemon zest, nutmeg, and pepper until smooth.
