Ingredients
1 cup fresh strawberries, hulled and chopped
1 and 3/4 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup buttermilk
2 large eggs
1/4 cup unsalted butter, melted
1/4 cup vegetable oil
1 teaspoon pure vanilla extract
1/2 cup fresh strawberries, pureed
1 and 1/2 cups powdered sugar
1/2 teaspoon lemon juice (optional)
Instructions
1. Blend 1 cup of strawberries until smooth. Reserve 1/4 cup for the batter and 1/2 cup for the glaze.
2. Preheat oven to 350°F (175°C). Grease a 6-cavity donut pan.
3. In a large bowl, sift and whisk together flour, baking powder, baking soda, salt, granulated sugar, and brown sugar.
4. In a separate bowl, mix eggs, buttermilk, melted butter, oil, vanilla extract, and 1/4 cup of the strawberry puree.
5. Combine wet and dry ingredients gently using a spatula until just combined.
6. Transfer batter to a piping bag and fill donut pan cavities 3/4 full.
7. Bake for 12–14 minutes until a toothpick inserted comes out clean.
8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
9. For the glaze, mix 1/2 cup strawberry puree with powdered sugar and lemon juice until smooth.
10. Dip cooled donuts in the glaze, let excess drip off, and allow glaze to set.
