Description

Ingredients

  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1/2 cup (120ml) milk
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups fresh blueberries (plus a few extra for topping)
  • 1 tbsp flour (for coating blueberries)
  • Optional: Zest of 1 lemon, coarse sugar for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another large bowl, cream the butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Alternately add the dry ingredients and milk to the wet mixture, beginning and ending with dry ingredients.
  6. Toss blueberries in 1 tbsp flour, then gently fold into the batter.
  7. Pour batter into prepared pan. Top with extra blueberries and coarse sugar if desired.
  8. Bake for 55–65 minutes or until a toothpick inserted comes out clean.
  9. Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.
