These Blueberry Oatmeal Bars are golden, buttery, and bursting with juicy berries. Perfect for breakfast, dessert, or snacking, they combine a hearty oat crust with a gooey, naturally sweet blueberry filling.
Ingredients
1 1/2 cups old-fashioned rolled oats
1 1/4 cups all-purpose flour
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup unsalted butter, cold and cubed
2 1/2 cups blueberries, fresh or frozen
2 teaspoons lemon juice
1 tablespoon cornstarch
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.
2. In a large bowl, mix oats, flour, brown sugar, granulated sugar, baking powder, salt, and cinnamon.
3. Cut in cold butter using a pastry cutter until crumbly.
4. Press two-thirds of the crumb mixture into the bottom of the pan to form the crust.
5. In a separate bowl, mix blueberries with lemon juice, cornstarch, sugar, and vanilla extract.
6. Spread blueberry mixture evenly over the crust.
7. Sprinkle the remaining crumb mixture on top and gently pat it down.
8. Bake for 40–45 minutes or until top is golden and filling is bubbling.
9. Cool completely in the pan before slicing into bars.
Notes
Use parchment paper with overhang to lift bars easily.
Bars can be stored at room temp for 2 days, refrigerated for 5–6 days, or frozen up to 2 months.
Cold butter is essential for the right crumb texture.
Add lemon zest to the filling for a bright flavor.
