  • 2 cups mushrooms (sliced; cremini or button mushrooms recommended)
  • 3 tablespoons olive oil (or neutral cooking oil)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated, optional)
  • 1/4 cup soy sauce (low sodium recommended)
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional for spice)
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients:
    • Wash and cut the broccoli into florets. Slice the mushrooms evenly. Mince the garlic and grate the ginger.
    • In a bowl, whisk together soy sauce, oyster sauce (if using), and cornstarch mixture to create the sauce.
  2. Blanch the Broccoli:
    • Bring a pot of salted water to a boil.
    • Add broccoli and blanch for 30 seconds. Drain and immediately rinse under cold water to stop the cooking process.
  3. Cook the Mushrooms:
    • Heat 2 tablespoons olive oil in a large wok or skillet over medium-high heat.
    • Add mushrooms and cook for 4-5 minutes until golden brown. Remove from the pan and set aside.
  4. Stir-Fry the Vegetables:
    • In the same pan, add the remaining 1 tablespoon olive oil, garlic, and ginger.
    • Cook for 30 seconds until fragrant, then add the blanched broccoli and cooked mushrooms.
    • Pour in the prepared sauce and toss everything together. Cook for 2-3 minutes until the sauce thickens and evenly coats the vegetables.
  5. Final Touches:
    • Drizzle with 1 teaspoon sesame oil and add red pepper flakes if desired.
