- 8 oz dark chocolate (60–70% cocoa), chopped
- 1/2 cup unsalted butter
- 2/3 cup granulated sugar
- 1/3 cup brown sugar
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- Flaky sea salt, for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a heatproof bowl, melt the chopped chocolate and butter together until smooth. Set aside to cool slightly.
- In a large bowl, whisk eggs, granulated sugar, and brown sugar for 2–3 minutes until pale and thick.
- Stir in the vanilla extract and the melted chocolate mixture.
- In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
- Fold dry ingredients into the wet mixture until just combined.
- Chill the dough for 20–30 minutes to firm up.
- Scoop the dough onto the prepared baking sheet, spacing each cookie about 2 inches apart.
- Sprinkle with flaky sea salt, if using.
