Ingredients

170g dark chocolate (70% cocoa or higher)

85g unsalted butter

100g granulated sugar

50g brown sugar

2 large eggs

1 tsp vanilla extract

65g all-purpose flour

15g cocoa powder

1/2 tsp baking powder

1/4 tsp salt

Flaky sea salt for topping


Instructions

1. In a heatproof bowl, melt the chopped dark chocolate and butter over simmering water or in the microwave. Stir until smooth and set aside to cool slightly.

2. In a large bowl, beat the granulated sugar, brown sugar, and eggs on high speed for 3–5 minutes until pale and fluffy.

3. Slowly add in the melted chocolate mixture along with the vanilla extract. Mix on low until fully incorporated.

4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

5. Fold the dry mixture into the wet ingredients using a spatula. The batter will resemble thick brownie batter.

6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

7. Scoop the batter using a tablespoon or cookie scoop and place 2 inches apart on the baking sheet.

8. Sprinkle each cookie with flaky sea salt.

9. Bake for 10–12 minutes, or until edges are set and centers are still soft.

10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
