Ingredients
2 cups rotini pasta
1 pound boneless skinless chicken breast or thigh, diced
1 tablespoon butter (for chicken)
2 cloves garlic, minced
1/2 cup buffalo sauce
2 tablespoons butter (for sauce)
4 ounces cream cheese, softened
3/4 cup milk
1 tablespoon ranch seasoning mix
1 teaspoon cajun seasoning
2 celery stalks, chopped
1/4 cup blue cheese crumbles (optional)
1 tablespoon chopped fresh parsley
Salt and pepper to taste
Instructions
1. Bring a pot of salted water to a boil. Cook rotini pasta until al dente, drain, and set aside. Reserve 1/4 cup pasta water.
2. In a skillet, melt 1 tablespoon of butter over medium-high heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6–8 minutes.
3. Add minced garlic to the chicken and cook for another minute. Pour in buffalo sauce and toss to coat. Simmer 2–3 minutes. Set aside.
4. In a separate pan, melt 2 tablespoons of butter. Stir in cream cheese until it starts to melt.
5. Slowly whisk in milk, stirring until smooth and creamy. Add ranch seasoning and cajun seasoning. Cook until slightly thickened.
6. Add pasta to the sauce and toss to coat. If the sauce is too thick, stir in a splash of pasta water.
7. Plate the pasta and top with buffalo garlic chicken.
