Ingredients

2 chicken breasts

8 ounces rotini pasta

1 tablespoon Cajun seasoning

1 tablespoon butter (for cooking chicken)

1 tablespoon butter (for sauce)

2 cloves garlic, minced

1 cup heavy cream

6 ounces Velveeta cheese, cubed

1 cup shredded mozzarella cheese

Salt, to taste

Black pepper, to taste

1 tablespoon fresh or dried parsley, for garnish


Instructions

1. Cut chicken into bite-sized pieces and pat dry. Season with Cajun seasoning, salt, and pepper.

2. Heat a skillet over medium-high heat with 1 tablespoon of butter. Sear the chicken until golden and fully cooked. Remove and set aside.

3. Cook rotini pasta in salted boiling water until al dente. Drain and set aside.

4. In the same skillet, melt 1 tablespoon butter over medium heat. Add minced garlic and cook for 30 seconds.

5. Pour in heavy cream, then add Velveeta and mozzarella. Stir until melted and smooth.

6. Add cooked rotini into the cheese sauce and mix until well coated.

7. Return the chicken to the pan and stir to combine. Let it warm through.

8. Garnish with chopped parsley and serve hot.

Notes

Use freshly shredded mozzarella for the smoothest melt and best flavor.

To lighten it up, swap heavy cream with half-and-half and use reduced-fat cheese.

Add a splash of reserved pasta water to thin the sauce if it gets too thick after combining.
