Ingredients

2 boneless, skinless chicken thighs or breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 ½ cups shredded mozzarella cheese

¼ cup grated parmesan cheese (optional)

8 ounces spaghetti

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped parsley (for garnish)

½ cup reserved pasta water (as needed)


Instructions

1. Pat the chicken dry and coat with Cajun seasoning, salt, and black pepper. Let rest for 10–15 minutes.

2. Heat olive oil in a skillet over medium-high heat. Sear the chicken on both sides for 5–6 minutes until golden and cooked through. Remove and rest.

3. Bring salted water to a boil and cook spaghetti until al dente. Drain and reserve ½ cup of the pasta water.

4. In the same skillet, reduce heat to medium and sauté the minced garlic until fragrant, about 30 seconds.

5. Pour in the heavy cream and stir to deglaze the pan, scraping up any bits left from the chicken.

6. Reduce heat to low, add mozzarella and parmesan gradually, and stir until smooth and fully melted. Add pasta water to thin if needed.

7. Toss the cooked spaghetti into the sauce and stir to coat evenly.

8. Slice the rested chicken and place it on top of the pasta.

9. Garnish with chopped parsley and serve hot.

Notes

For the smoothest sauce, use freshly shredded mozzarella instead of pre-packaged.

Always reserve some pasta water—it helps adjust the sauce consistency perfectly.

To make it lighter, substitute half-and-half for heavy cream and reduce the cheese slightly.
