Ingredients

2 large chicken breasts

2 tablespoons Cajun seasoning

3 tablespoons unsalted butter

1 tablespoon olive oil

4 garlic cloves, minced

1 cup heavy cream

1 cup freshly grated parmesan cheese

12 ounces penne pasta

½ teaspoon salt

¼ teaspoon black pepper

½ cup reserved pasta water (as needed)

2 tablespoons fresh parsley, chopped


Instructions

1. Cut the chicken into bite-sized pieces and pat dry. Season with Cajun seasoning and a pinch of salt.

2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken and sear until golden and cooked through, about 5–7 minutes. Remove and set aside.

3. In a large pot, cook penne pasta in salted boiling water until al dente. Drain and set aside, reserving ½ cup of the pasta water.

4. In the same skillet, lower the heat to medium. Add the remaining butter and garlic. Sauté for about 1 minute until fragrant.

5. Pour in heavy cream and bring to a gentle simmer. Stir in grated parmesan and cook until the sauce is creamy and smooth. Season with salt and black pepper.

6. Add the cooked pasta to the skillet and toss to coat in the sauce. Add the chicken back in and let simmer for 2–3 minutes. Add a splash of reserved pasta water if needed.

7. Garnish with chopped parsley and serve hot.
