2 large boneless skinless chicken breasts
1 ½ tablespoons Cajun seasoning
1 tablespoon olive oil
salt and black pepper to taste
18 ounces refrigerated cheese tortellini
2 tablespoons unsalted butter
4 cloves garlic minced
1 cup heavy cream
4 ounces cream cheese cubed
1 cup shredded mozzarella cheese
½ cup freshly grated Parmesan cheese
½ teaspoon Cajun seasoning optional
¼ to ½ cup reserved pasta water
chopped fresh parsley for garnish
extra Parmesan for garnish
crushed red pepper flakes for garnish
Instructions
1. Pat chicken breasts dry and slice into cutlets if preferred. Season with Cajun seasoning, salt, and pepper.
