Ingredients
2 cups cubed butternut squash
2 large yellow onions, thinly sliced
4 oz goat cheese, crumbled
1 sheet puff pastry, thawed
1 tablespoon fresh thyme leaves
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons grated Parmesan cheese (optional)
Instructions
1. Preheat oven to 400°F (200°C).
2. Toss cubed butternut squash with 1 tablespoon olive oil, salt, and pepper. Roast on a baking sheet for 25–30 minutes until tender and golden.
3. In a large skillet, heat 1 tablespoon olive oil over medium-low heat. Add sliced onions and a pinch of salt. Cook, stirring occasionally, for 30–40 minutes until caramelized.
4. Roll out puff pastry and fit it into a tart pan. Prick the base with a fork and chill in the fridge for 10 minutes.
5. Spread caramelized onions over the base of the pastry. Top with roasted squash, crumbled goat cheese, thyme leaves, and Parmesan if using.
6. Bake tart at 375°F (190°C) for 25–30 minutes until pastry is golden and puffed.
7. Let cool slightly before slicing. Garnish with extra thyme or a light drizzle of honey if desired.
Notes
For a crispier base, chill the puff pastry in the pan before baking.
Use a tart pan with removable bottom for easy serving and cleaner edges.
