Ingredients

1 pound bread dough

2 large yellow onions, thinly sliced

1 1/2 cups grated Gruyère cheese

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon fresh thyme leaves

1/2 teaspoon salt

1 large egg, beaten (for egg wash)

Optional: fresh rosemary or thyme sprigs for garnish


Instructions

1. Caramelize the onions by cooking them in butter and olive oil over medium-low heat for 30–40 minutes until deep golden and sweet. Add salt and thyme in the last 10 minutes.

2. Roll out the bread dough into a large rectangle on a floured surface.

3. Spread the caramelized onions evenly over the dough, leaving a small border around the edges.

4. Sprinkle the grated Gruyère cheese over the onions.

5. Cut the dough into strips or squares and shape into a wreath on parchment paper or in a greased bundt pan.

6. Pinch the ends to seal the ring and cover with a towel to rise for 30–45 minutes.
