340g rotini pasta

2 boneless skinless chicken breasts (about 450g), cut into chunks

4 cloves garlic, minced

2 tablespoons butter

1 tablespoon olive oil

1 cup heavy cream

¾ cup freshly grated Parmesan cheese

½ cup shredded mozzarella cheese (optional)

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon chopped parsley (dried or fresh, for garnish)


Instructions

1. Bring a large pot of salted water to a boil. Add rotini and cook until al dente. Drain and reserve ½ cup of pasta water.

2. Season chicken pieces with salt, pepper, and Italian seasoning.

3. In a large skillet over medium-high heat, melt butter with olive oil. Add garlic and sauté for 30 seconds.

4. Add the seasoned chicken and cook until golden and fully cooked through (about 6–8 minutes). Remove and set aside.

5. In the same skillet, reduce heat to medium. Pour in the heavy cream and simmer for 2–3 minutes.

6. Stir in Parmesan and mozzarella (if using), and mix until smooth and creamy. Season with salt and pepper to taste.

7. Add cooked rotini to the sauce and stir until well coated. Add reserved pasta water a bit at a time if needed.

8. Return the cooked chicken to the pan and toss to combine.

9. Plate and garnish with parsley. Serve immediately.

Let your cheese come to room temperature before adding to the sauce—it melts much smoother that way.
