  • 1 packet taco seasoning (or about 2 tablespoons homemade taco seasoning)
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 1 cup beef broth (or chicken broth)
  • 1 cup sour cream
  • 1 ½ cups shredded cheddar cheese (or Mexican blend)
  • 1 tablespoon olive oil (for sautéing)
  • 1 small onion (optional, finely chopped)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh cilantro (optional, for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, then add pasta. Cook according to package directions, drain, and set aside.
  2. Brown the Ground Beef: Heat olive oil in a large skillet over medium heat. Brown the ground beef, breaking it apart with a spoon. Drain excess fat.
  3. Add Taco Seasoning and Tomatoes: Stir in taco seasoning and canned tomatoes (drained). Cook for 2 minutes.
  4. Create the Creamy Sauce: Add beef broth, heavy cream, and sour cream to the pan. Stir and simmer for 3-4 minutes to thicken.
