Ingredients
2 cups diced Yukon Gold or red potatoes
4 large eggs
1 cup shredded cheddar cheese
1/2 cup diced cooked ham
1/4 cup finely chopped onion
2 tablespoons butter or cooking oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh chives
Instructions
1. Wash and dice the potatoes into small, even cubes and pat completely dry.
2. Heat butter or oil in a skillet over medium heat and cook potatoes in a single layer until golden and fork-tender, about 12–15 minutes, adding onion halfway through.
3. Stir in diced ham and cook 2–3 minutes until lightly browned.
4. Whisk eggs with salt and pepper until fully combined.
5. Reduce heat to medium-low and pour eggs over the potato mixture.
6. Gently fold from the edges toward the center until soft curds form and eggs are mostly set.
7. Sprinkle cheddar cheese evenly over the top and cover briefly to melt.
8. Remove from heat, garnish with chives, and serve immediately.
Notes
Soak diced potatoes in cold water for 10–15 minutes before cooking for extra crispiness.
Remove eggs from heat while slightly glossy to prevent dryness.
Use freshly shredded cheese for smoother melting and better texture.
