Ingredients
- 1 package of puff pastry sheets (2 sheets), thawed
- 6 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 tsp vanilla extract
- 1/2 cup cherry pie filling or cherry preserves
- 1 egg (for egg wash)
- 1 tbsp all-purpose flour (for dusting)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, beat cream cheese, sugar, and vanilla extract until smooth.
- On a lightly floured surface, roll out puff pastry sheets to even them. Cut each sheet into 4 rectangles (8 total).
- Spoon a tablespoon of the cream cheese mixture into the center of 4 rectangles, leaving a border around the edges.
- Add a teaspoon of cherry filling on top of the cream cheese.
- Brush the edges with egg wash, place another rectangle on top, and press to seal with a fork.
- Cut a small slit in the top of each hand pie for ventilation.
- Brush tops with remaining egg wash.
- Bake for 18–22 minutes or until golden brown and puffed.
- Cool on a wire rack for at least 10 minutes before serving.
