Description

These Cherry Pie Bites are a flaky, golden, and sweet mini dessert that comes together fast with puff pastry and cherry pie filling. Perfect for a quick breakfast, holiday dessert tray, or easy snack. They’re crisp on the outside, juicy on the inside, and topped with a sweet icing drizzle.


Ingredients

2 sheets puff pastry, thawed

1 cup cherry pie filling

1 egg, beaten with a splash of water

1/2 cup powdered sugar

1 tablespoon milk or cream

1/4 teaspoon vanilla extract (optional)


Instructions

1. Preheat the oven to 375°F (190°C) and lightly grease a mini muffin pan.

2. Cut thawed puff pastry into 2.5 to 3-inch squares and press into mini muffin wells.

3. Fill each pastry cup with about 1 tablespoon cherry pie filling, including a whole cherry if possible.

4. Brush edges of the pastry with egg wash for golden color.

5. Bake for 15–18 minutes until the pastry is puffed and golden brown.

6. Let cool in the pan for 5 minutes, then transfer to a wire rack.

7. Mix powdered sugar, milk, and vanilla (if using), and drizzle over the cooled bites.

8. Allow the icing to set before serving or storing.

Notes

Let the puff pastry thaw just enough to be pliable—too soft and it becomes sticky.

Be careful not to overfill the cups to prevent overflow during baking.

Use a whole cherry in each cup for the best presentation and bite.
