Ingredients
2 cups cooked chicken, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup chicken broth
3/4 cup heavy cream or half-and-half
1 cup sliced mushrooms
1/2 cup chopped carrots
1/2 cup green peas
1/2 cup chopped onion
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried thyme
4 cups cooked egg noodles or puff pastry shells (for serving)
Instructions
1. Chop all vegetables and mince garlic. If using frozen peas, thaw them.
2. In a large skillet, melt butter over medium heat. Add onions and garlic; sauté for 3–4 minutes until soft.
3. Add mushrooms and carrots. Cook for 6–7 minutes until vegetables are softened and fragrant.
4. Sprinkle in flour and stir well to coat vegetables. Cook the roux for 1–2 minutes.
5. Gradually whisk in chicken broth until smooth. Stir in heavy cream and let simmer for 4–5 minutes until thickened.
6. Fold in cooked chicken, peas, dried thyme, salt, and pepper. Cook on low for another 3–4 minutes until warmed through.
7. Serve hot over egg noodles, puff pastry, or rice. Garnish with parsley if desired.
Notes
Let cream come to room temperature before adding to avoid curdling.
For added depth, add a splash of lemon juice or a pinch of nutmeg to the sauce.
Use rotisserie chicken to save time and boost flavor.
