Ingredients

  • 12 oz pasta (penne, rigatoni, or rotini)
  • 2 cups broccoli florets
  • 2 boneless, skinless chicken breasts (cubed)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper (to taste)
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Add the broccoli in the last 2 minutes of cooking. Drain, reserving 1/2 cup of pasta water. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then cook for about 4-5 minutes per side until golden brown and fully cooked. Remove and set aside.
  3. In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds until fragrant.
  4. Pour in the chicken broth and let it simmer for 2 minutes, scraping up any browned bits from the pan.
  5. Stir in the heavy cream and let it simmer until slightly thickened. Then, add the Parmesan cheese and stir until smooth.
  6. Add the cooked pasta, broccoli, and chicken to the skillet, tossing everything together to coat evenly. If the sauce is too thick, add a bit of reserved pasta water.
  7. Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.
  8. Serve immediately with extra Parmesan on top. Enjoy!
