Ingredients
- 12 oz pasta (penne, rigatoni, or rotini)
- 2 cups broccoli florets
- 2 boneless, skinless chicken breasts (cubed)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 2 tbsp butter
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- Salt and pepper (to taste)
- 1/2 tsp red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Add the broccoli in the last 2 minutes of cooking. Drain, reserving 1/2 cup of pasta water. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then cook for about 4-5 minutes per side until golden brown and fully cooked. Remove and set aside.
- In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds until fragrant.
- Pour in the chicken broth and let it simmer for 2 minutes, scraping up any browned bits from the pan.
- Stir in the heavy cream and let it simmer until slightly thickened. Then, add the Parmesan cheese and stir until smooth.
- Add the cooked pasta, broccoli, and chicken to the skillet, tossing everything together to coat evenly. If the sauce is too thick, add a bit of reserved pasta water.
- Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.
- Serve immediately with extra Parmesan on top. Enjoy!
