Each bite delivers creamy filling and golden biscuit-like topping that makes it one of the best dinner ideas for busy weeknights.

Ingredients

3 cups cooked chicken breast, shredded or cubed

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

½ cup whole milk

¼ cup unsalted butter, melted

½ teaspoon dried thyme

½ teaspoon dried parsley

1 cup all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

1 cup whole milk

2 tablespoons unsalted butter, melted

½ cup frozen peas and carrots (optional)

¼ cup diced celery (optional)

¼ cup diced onion (optional)

½ cup shredded cheddar cheese (optional)

Instructions

1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

2. Spread cooked chicken evenly in the dish and season with salt, pepper, garlic powder, and onion powder. Add vegetables if using.

3. Whisk together cream of chicken soup, chicken broth, milk, melted butter, thyme, and parsley until smooth. Pour over chicken without stirring.

4. Mix flour, baking powder, and salt in a separate bowl. Stir in milk and melted butter just until combined.

5. Pour dumpling batter evenly over the sauce layer without stirring. Add cheese if desired.

6. Bake uncovered for 40–45 minutes until golden brown and cooked through.

7. Rest 10–15 minutes before serving to allow sauce to thicken.

Notes

Do not stir the casserole layers after assembling to ensure proper dumpling texture.

Avoid overmixing the dumpling batter to keep it light and fluffy.

Let the casserole rest before serving so the filling thickens properly.
