Ingredients

  • 2 tablespoons olive oil
  • pounds boneless, skinless chicken breasts, cubed
  • 2 teaspoons garlic powder
  • Salt and black pepper to taste
  • 5 ounces fresh spinach (or 10 ounces frozen, thawed and drained)
  • 8 ounces cream cheese, softened
  • ½ cup sour cream
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium-high heat. Add chicken, season with garlic powder, salt, and pepper. Sear until lightly browned, about 4–5 minutes. Remove from heat.
  3. In the same skillet, wilt fresh spinach or heat and drain frozen spinach. Remove excess moisture.
  4. In a bowl, mix softened cream cheese, sour cream, onion powder, half the Parmesan cheese, and red pepper flakes if using.
  5. Fold the spinach into the cream cheese mixture.
  6. In a 9×13-inch baking dish, spread half the cream cheese mixture on the bottom. Layer the seared chicken on top, then the remaining cream cheese mixture.
  7. Sprinkle mozzarella and the remaining Parmesan over the top.
  8. Bake uncovered for 25–30 minutes, or until golden and bubbly. Let rest for 5–10 minutes before serving.
