This Chicken and Spinach Casserole with Cream Cheese is a creamy, cheesy, and comforting one-pan meal packed with lean chicken, tender spinach, and a rich cream cheese base. Perfect for family dinners or meal prep, it’s simple to make and bursting with savory flavor.
Ingredients
- 2 tablespoons olive oil
- 1½ pounds boneless, skinless chicken breasts, cubed
- 2 teaspoons garlic powder
- Salt and black pepper to taste
- 5 ounces fresh spinach (or 10 ounces frozen, thawed and drained)
- 8 ounces cream cheese, softened
- ½ cup sour cream
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- ½ teaspoon onion powder
- ¼ teaspoon crushed red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium-high heat. Add chicken, season with garlic powder, salt, and pepper. Sear until lightly browned, about 4–5 minutes. Remove from heat.
- In the same skillet, wilt fresh spinach or heat and drain frozen spinach. Remove excess moisture.
- In a bowl, mix softened cream cheese, sour cream, onion powder, half the Parmesan cheese, and red pepper flakes if using.
- Fold the spinach into the cream cheese mixture.
- In a 9×13-inch baking dish, spread half the cream cheese mixture on the bottom. Layer the seared chicken on top, then the remaining cream cheese mixture.
- Sprinkle mozzarella and the remaining Parmesan over the top.
- Bake uncovered for 25–30 minutes, or until golden and bubbly. Let rest for 5–10 minutes before serving.
