Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 2 cups dry pasta (penne, rotini, or elbow macaroni)
  • 1 tablespoon olive oil or butter
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas or mixed vegetables (optional)
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 2 tablespoons butter (for sauce)
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Pinch of nutmeg (optional)
  • 1 cup shredded cheddar or mozzarella (for topping)
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
  2. Cook pasta until al dente, drain, and set aside.
  3. In a skillet, heat olive oil or butter. Sauté onion until translucent, then add garlic and mushrooms. Cook until soft. Season with salt, pepper, and thyme.
  4. In a saucepan, melt 2 tbsp butter. Whisk in flour, then gradually add milk and chicken broth. Stir until thickened. Add mozzarella, Parmesan, and nutmeg. Mix until smooth.
  5. In a large bowl, combine pasta, chicken, vegetables, and sauce. Mix gently.
  6. Pour into casserole dish, top with shredded cheese.
  7. Cover with foil and bake 20 minutes. Remove foil and bake 10-15 more minutes until golden and bubbling.
  8. Let rest 5-10 minutes. Garnish with parsley and serve.
