Ingredients
- 3 cups cooked chicken, shredded or diced
- 2 cups dry pasta (penne, rotini, or elbow macaroni)
- 1 tablespoon olive oil or butter
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 cup mushrooms, sliced
- 1 cup frozen peas or mixed vegetables (optional)
- Salt and pepper to taste
- 1/2 teaspoon dried thyme or Italian seasoning
- 2 tablespoons butter (for sauce)
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Pinch of nutmeg (optional)
- 1 cup shredded cheddar or mozzarella (for topping)
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
- Cook pasta until al dente, drain, and set aside.
- In a skillet, heat olive oil or butter. Sauté onion until translucent, then add garlic and mushrooms. Cook until soft. Season with salt, pepper, and thyme.
- In a saucepan, melt 2 tbsp butter. Whisk in flour, then gradually add milk and chicken broth. Stir until thickened. Add mozzarella, Parmesan, and nutmeg. Mix until smooth.
- In a large bowl, combine pasta, chicken, vegetables, and sauce. Mix gently.
- Pour into casserole dish, top with shredded cheese.
- Cover with foil and bake 20 minutes. Remove foil and bake 10-15 more minutes until golden and bubbling.
- Let rest 5-10 minutes. Garnish with parsley and serve.
