4 boneless, skinless chicken breasts
Salt and black pepper to taste
0.5 cup all-purpose flour
2 tablespoons olive oil
2 tablespoons unsalted butter
2 tablespoons unsalted butter (for sauce)
8 oz cremini or button mushrooms, sliced
3 cloves garlic, minced
0.5 cup dry white wine (or chicken broth)
0.5 cup chicken broth
0.75 cup heavy cream
0.5 teaspoon dried thyme
0.5 teaspoon onion powder
Salt and black pepper to taste
0.25 cup fresh parsley, chopped
0.5 cup shredded mozzarella or Swiss cheese (optional)
Instructions
1. Pat chicken breasts dry and season with salt and pepper. Dredge in flour and shake off excess.
