Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced (cremini or baby bella)
  • 1 tsp Dijon mustard
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Sear chicken pieces until golden and just cooked through. Remove and set aside.
  2. In the same skillet, add remaining butter. Sauté onion until soft, then add garlic and cook until fragrant.
  3. Add mushrooms and cook until browned and their moisture has evaporated.
  4. Stir in Dijon mustard and deglaze the pan with chicken broth, scraping up brown bits.
  5. Add heavy cream, reduce heat, and simmer for 3–5 minutes until slightly thickened.
  6. Return chicken to the pan and stir to coat in sauce. Simmer 2–3 minutes more.
  7. Taste and adjust seasoning with salt and pepper.
  8. Garnish with fresh parsley and serve hot.
