Ingredients

1 tablespoon olive oil

4 chicken sausages, sliced

1 small red onion, diced

2 cloves garlic, minced

2 cups broccoli florets

1 cup orzo pasta

2 1/2 cups chicken broth

1/2 cup grated Parmesan cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Heat olive oil in a large skillet over medium-high heat. Add sliced chicken sausage and sear until browned, about 4-5 minutes. Remove and set aside.

2. In the same pan, sauté red onion for 2-3 minutes until softened. Add garlic and cook for 1 more minute.

3. Add broccoli florets and cook for 3-4 minutes until they begin to soften but remain vibrant.

4. Stir in orzo and toast for 1-2 minutes, stirring constantly to coat in oil and aromatics.

5. Pour in chicken broth, bring to a boil, then reduce to a simmer. Cook uncovered, stirring occasionally, for 8-10 minutes until orzo is tender and broth is absorbed.

6. Return the sausage to the pan and mix to combine. Cook for another 2-3 minutes to heat through.

7. Remove from heat, stir in Parmesan cheese until creamy, and season with salt and pepper.

8. Garnish with fresh parsley and serve warm.

For deeper flavor, toast the orzo before adding the broth.
