2 boneless skinless chicken breasts or thighs

1 tablespoon olive oil

3 tablespoons butter (divided)

4 garlic cloves minced

1 tablespoon fresh lemon juice

1 cup chicken broth (plus more for rice)

1 pinch red pepper flakes (optional)

2 cups cooked white rice

½ cup heavy cream

½ cup freshly grated parmesan cheese

2 tablespoons chopped fresh parsley

Instructions

1. Cut chicken into bite-sized pieces and pat dry. Season with salt, pepper, Italian seasoning, and red pepper flakes if using.

2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high. Sear chicken in batches until golden and cooked through. Set aside.
