Ingredients

500g boneless skinless chicken thighs

3 cloves garlic, minced

3 tablespoons butter

1 teaspoon chili flakes or 1 tablespoon chili paste

300g rotini pasta

1 cup sweet corn kernels (fresh, frozen, or canned)

1 cup heavy cream

¾ cup freshly grated Parmesan cheese

1½ teaspoons Cajun seasoning

Salt, to taste

Black pepper, to taste

2 tablespoons chopped fresh parsley

2 green onions, sliced


Instructions

1. Cut chicken thighs into bite-sized pieces and pat dry. Season with salt, pepper, and Cajun seasoning.

2. In a skillet, melt butter and sauté minced garlic until fragrant. Add chili flakes or paste, then add chicken and sear until golden and cooked through. Set aside.

3. Boil rotini pasta in salted water until al dente. Reserve 1 cup of pasta water before draining.

4. In the same skillet, melt more butter and sauté garlic. Add Cajun seasoning and stir in heavy cream. Let simmer, then whisk in Parmesan until smooth.

5. Add cooked pasta and corn to the sauce. Stir and simmer, adding pasta water to loosen if needed.

6. Return the chicken to the pan or plate pasta first and top with the chicken.

7. Garnish with chopped green onions and parsley before serving.

Notes

Let your cream come to room temperature before adding it to the hot skillet to prevent curdling.

Use freshly grated Parmesan for the best melt and flavor in your Alfredo sauce.
