2 boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon chipotle chili powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
0.5 teaspoon cumin
0.5 teaspoon salt
0.25 teaspoon black pepper
0.5 lime juiced
0.5 cup Greek yogurt or sour cream
1 chipotle pepper in adobo sauce
1 tablespoon adobo sauce
1 tablespoon lime juice
1 garlic clove
Salt to taste
1 cup canned black beans drained and rinsed
1 cup corn kernels
1 avocado sliced
0.25 cup chopped fresh cilantro

Instructions
1. In a medium bowl, mix olive oil, chipotle chili powder, smoked paprika, garlic powder, cumin, salt, pepper, and lime juice. Coat the chicken breasts and marinate for at least 15 minutes or overnight.
2. In a blender or food processor, combine Greek yogurt, chipotle pepper, adobo sauce, lime juice, and garlic. Blend until smooth and refrigerate.
3. Heat a skillet or grill pan over medium-high. Cook the chicken for 5–7 minutes per side until fully cooked. Let rest before slicing.
