2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup unsalted butter (softened, for mint layer)

2 cups powdered sugar

1 1/2 teaspoons peppermint extract

2 tablespoons heavy cream or milk

2 to 3 drops green food coloring (optional)

1 cup semi-sweet chocolate chips (for topping)


Instructions

1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.

2. In a saucepan, melt 1 cup butter with 1 cup chocolate chips until smooth. Remove from heat.

3. Stir in sugar, then beat in eggs one at a time. Add vanilla extract and mix well.

4. Fold in cocoa powder, flour, and salt until fully combined.

5. Pour batter into prepared pan and bake for 25–30 minutes. Let cool completely.

6. For the mint layer, beat 1/2 cup softened butter with powdered sugar, peppermint extract, and cream until fluffy. Add food coloring if using.

7. Spread the mint mixture evenly over the cooled brownies. Chill for 15 minutes.

8. Melt the remaining chocolate chips and gently spread over the mint layer.

9. Refrigerate until the topping is fully set, about 30 minutes.

10. Slice into squares with a sharp, clean knife and serve chilled or at room temperature.
