Ingredients

2 cups heavy cream

Instructions

1. Pour heavy cream into a medium saucepan over medium heat. Add caster sugar and orange zest. Stir gently to dissolve sugar and bring mixture to a gentle simmer.

2. Let the mixture simmer for 2–3 minutes, allowing the orange zest to infuse into the cream. Do not let it boil over.

3. Remove from heat. Add chopped dark chocolate and stir until completely melted and smooth. Add vanilla extract if using.

4. Slowly pour in fresh orange juice while stirring continuously. The mixture will begin to thicken slightly.

5. Optional: Strain the mixture through a fine sieve to remove zest and any unmelted bits for a smoother finish.

6. Pour the mixture into ramekins or serving cups. Let cool for 10–15 minutes at room temperature.

Use only full-fat cream; low-fat alternatives won’t set properly.
