Ingredients
2 cups heavy cream
1/2 cup caster sugar
Zest of 1 large orange
1/4 cup fresh orange juice
100g dark chocolate (60–70% cocoa), chopped
1/2 tsp vanilla extract (optional)
Instructions
1. Pour heavy cream into a medium saucepan over medium heat. Add caster sugar and orange zest. Stir gently to dissolve sugar and bring mixture to a gentle simmer.
2. Let the mixture simmer for 2–3 minutes, allowing the orange zest to infuse into the cream. Do not let it boil over.
3. Remove from heat. Add chopped dark chocolate and stir until completely melted and smooth. Add vanilla extract if using.
4. Slowly pour in fresh orange juice while stirring continuously. The mixture will begin to thicken slightly.
5. Optional: Strain the mixture through a fine sieve to remove zest and any unmelted bits for a smoother finish.
6. Pour the mixture into ramekins or serving cups. Let cool for 10–15 minutes at room temperature.
7. Transfer to the refrigerator and chill for at least 4 hours or overnight until set.
8. Garnish with extra orange zest, chocolate shavings, or candied orange slices. Serve chilled.
Notes
Use only full-fat cream; low-fat alternatives won’t set properly.
Fresh orange juice is essential—avoid bottled versions with added sugar.
Let the dessert chill fully before serving for best texture and presentation.
