Description

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons melted butter (or oil)
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional)
  • Chocolate ganache or syrup, for topping
  • Whipped cream and chocolate shavings, optional for garnish

Instructions

  1. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, beat the egg and mix with milk, melted butter, and vanilla extract.
  3. Combine wet and dry ingredients, stirring until just combined. Fold in chocolate chips if using.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease.
  5. Pour 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form and edges look set.
  6. Flip and cook another 1-2 minutes, then transfer to a plate. Repeat with remaining batter.
  7. Top with chocolate ganache, whipped cream, and chocolate shavings if desired.
