Ingredients

1 box yellow cake mix

2 cups cranberries (fresh or frozen)

1 can (20 oz) crushed pineapple with juice

1 cup chopped pecans or walnuts

1/2 cup brown sugar

1 cup butter, melted

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup vanilla icing or glaze (optional)

2 tablespoons festive sprinkles or powdered sugar (optional)

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. Spread crushed pineapple with juice evenly across the bottom of the dish.

3. Scatter cranberries on top of the pineapple layer.

4. Sprinkle dry yellow cake mix evenly over the fruit without mixing.

5. Add cinnamon, nutmeg, and brown sugar over the cake mix.

6. Drizzle melted butter evenly across the surface, covering as much as possible.

7. Top with chopped nuts and bake for 45–50 minutes until golden and bubbly.

8. Let cool for 15 minutes before adding icing or sprinkles.

9. Slice and serve warm or at room temperature.

10. Store leftovers covered at room temp or in the fridge.

Notes

This cake is best enjoyed warm with ice cream.

For extra crunch, toast the nuts before adding.

Let it rest 15–20 minutes after baking to fully set and enhance the flavor.
