Ingredients
1 sleeve saltine crackers
1 cup unsalted butter
1 cup brown sugar
2 tablespoons cinnamon sugar
8 ounces cream cheese
1 cup whipped cream
1 teaspoon vanilla extract
1/2 cup powdered sugar
Instructions
1. Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with foil or parchment paper and arrange the saltine crackers in a single layer.
2. In a saucepan, melt butter and brown sugar over medium heat. Stir until it begins to boil, then let it boil undisturbed for 3 minutes.
3. Pour the hot toffee mixture over the crackers, spreading it evenly.
4. Bake for 8–10 minutes until bubbly. Let cool slightly.
5. Sprinkle cinnamon sugar generously over the warm toffee layer.
6. Beat cream cheese until smooth. Add powdered sugar and vanilla; mix well.
7. Gently fold in whipped cream until light and fluffy.
8. Once the toffee layer is completely cool, cut into squares.
9. Spread cream filling on half the squares and top with the others to make sandwiches.
10. Chill for at least 1 hour, then dust with powdered sugar before serving.
Notes
For a firmer filling, chill the cream cheese before mixing with other ingredients.
Don’t skip the baking step—it gives the crackers that signature toffee snap.
Use a serrated knife to cut clean squares once fully chilled.
