Description

Classic Corn Casserole is the ultimate comfort food side dish that works as a quick breakfast addition, an easy dinner companion, or one of your go-to holiday dinner ideas. This easy recipe delivers a golden, buttery top with a soft, creamy center packed with sweet corn flavor. Whether you’re searching for cozy food ideas, simple potluck dishes, or reliable family-style dinner ideas, this baked corn casserole brings warmth and satisfaction to every table.

Ingredients

1 cup unsalted butter, melted

1 cup sour cream

2 large eggs

1 can (15 oz) whole kernel corn, drained

1 can (15 oz) creamed corn

1 box (8.5 oz) corn muffin mix

2 tablespoons granulated sugar (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded cheddar cheese (optional)

Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a large bowl, whisk together melted butter and sour cream until smooth.

3. Add eggs and whisk until fully incorporated and creamy.

4. Fold in the drained whole kernel corn and creamed corn.

5. Stir in corn muffin mix, sugar (if using), salt, and black pepper until just combined.

6. Fold in shredded cheddar cheese if using. Do not overmix.

7. Pour batter into prepared baking dish and spread evenly.

8. Bake for 45–55 minutes, until golden brown and the center is set.

9. Let rest for 10–15 minutes before serving for best texture.

Notes

Make sure to drain the whole kernel corn thoroughly to prevent excess moisture in the casserole.

Allow the casserole to rest after baking so it sets properly and slices cleanly.

For extra flavor, add diced jalapeños or a sprinkle of cheese on top during the last 5 minutes of baking.
