Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 8 oz linguine or spaghetti
  • 4 tablespoons unsalted butter, divided
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • Optional: Grated Parmesan cheese, lemon wedges

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Heat 2 tbsp olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear shrimp 2–3 minutes per side. Remove and set aside.
  3. Reduce heat to medium. Add remaining 1 tbsp olive oil and 2 tbsp butter. Sauté garlic for 30 seconds.
  4. Add white wine, scraping the pan, and let simmer 2–3 minutes.
  5. Stir in lemon juice, lemon zest, and red pepper flakes.
  6. Return shrimp to skillet, then add cooked pasta. Toss well.
  7. Add reserved pasta water as needed to loosen sauce.
  8. Season with salt and pepper. Garnish with parsley. Serve hot.
