Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 oz linguine or spaghetti
- 4 tablespoons unsalted butter, divided
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1/2 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley
- Optional: Grated Parmesan cheese, lemon wedges
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
- Heat 2 tbsp olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear shrimp 2–3 minutes per side. Remove and set aside.
- Reduce heat to medium. Add remaining 1 tbsp olive oil and 2 tbsp butter. Sauté garlic for 30 seconds.
- Add white wine, scraping the pan, and let simmer 2–3 minutes.
- Stir in lemon juice, lemon zest, and red pepper flakes.
- Return shrimp to skillet, then add cooked pasta. Toss well.
- Add reserved pasta water as needed to loosen sauce.
- Season with salt and pepper. Garnish with parsley. Serve hot.
