Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 tablespoons granulated sugar
8 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups sweetened shredded coconut
1 cup toffee bits
1 cup semi-sweet chocolate chips
1/4 cup heavy cream
1/4 cup toasted coconut flakes (optional)
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment or grease it lightly.
2. Mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the pan to form the crust. Bake for 8–10 minutes. Let cool.
3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, and fold in shredded coconut. Pour over crust and spread evenly.
4. Bake coconut layer for 20–25 minutes, until edges are golden and center is set. Let cool completely.
5. In a saucepan over low heat, melt chocolate chips, heavy cream, and toffee bits until smooth. Cool slightly.
6. Pour toffee-chocolate over the cooled coconut layer and spread evenly.
7. Sprinkle toasted coconut flakes over the top for garnish.
8. Chill for at least 2 hours or until fully set.
9. Lift out of the pan using parchment and slice into bars.
10. Serve chilled or at room temperature.
