Ingredients
8 oz spaghetti or Chinese egg noodles
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon toasted sesame oil
1 tablespoon neutral oil
1 tablespoon smooth peanut butter
2 teaspoons brown sugar or honey
3 cloves garlic, finely minced
1/2 teaspoon grated fresh ginger
1/2 teaspoon chili flakes or chili oil
2 tablespoons water
2 tablespoons sesame seeds, toasted
2 stalks green onions, sliced
Salt to taste
Instructions
1. Bring a large pot of salted water to a boil. Add noodles and cook according to the package instructions until al dente. Drain and rinse under cold water if serving cold. Set aside.
2. In a mixing bowl, whisk together soy sauce, rice vinegar, sesame oil, neutral oil, peanut butter, brown sugar or honey, garlic, ginger, chili flakes, and water until smooth.
3. Toast sesame seeds in a dry skillet over medium heat for 2–3 minutes until golden and fragrant. Set aside.
4. Add cooked noodles to a large bowl. Pour sauce over noodles and toss to coat evenly.
5. Top with toasted sesame seeds and sliced green onions. Serve warm or chilled.
Notes
Rinse noodles in cold water if serving cold to prevent sticking.
Use low-sodium soy sauce to balance flavors and reduce saltiness.
Add chili oil or sriracha to spice it up, or keep it mild for kids.
