This Copycat Costco Chicken Bake is a delicious homemade version of the food court favorite! Made with pizza dough, creamy Caesar dressing, mozzarella cheese, bacon, and juicy chicken, it’s baked to golden perfection. A cheesy, crispy, and satisfying meal perfect for lunch, dinner, or meal prep.


Ingredients

  • 1 lb pizza dough
  • 2 cups cooked chicken, shredded or diced
  • ½ cup Caesar dressing
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup cooked bacon, crumbled
  • ¼ cup grated Parmesan cheese
  • 1 egg (for egg wash)
  • ½ tsp black pepper
  • ½ tsp garlic powder (optional)
  • 2 tbsp chopped green onions (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out pizza dough into a large rectangle, about ¼-inch thick.
  3. In a bowl, mix chicken, Caesar dressing, mozzarella cheese, bacon, black pepper, and garlic powder.
  4. Spread the chicken mixture evenly over the dough, leaving an inch around the edges.
  5. Sprinkle Parmesan cheese and green onions (if using) on top.
  6. Roll the dough tightly from the long side and pinch the seam to seal.
  7. Place seam-side down on the baking sheet and brush with egg wash.
  8. Sprinkle extra Parmesan cheese on top for added crispiness.
  9. Bake for 20-25 minutes or until golden brown.
  10. Let it cool for 5 minutes before slicing and serving.
